Shrimp and mushroom curry
Ingredients :
- 2 tbsp oil
- 2 cloves garlic, minced
- 1 thumb fresh ginger, minced
- 2 ~ 3 shallots, chopped
- 1 tsp paprika powder ( or ) curry paste
- 3 fresh red peppers ( or ) green chillies
- 2 ~ 3 tbsp fish sauce or to taste
- 1 tsp paprika
- 1 1/2 cups of coconut milk
- ½ pound fresh mushrooms
- 1 pound shrimp, peeled and deveined
- 5 kaffir lime leaves, finely slivered
- Heat 2 tbsp oil in sauce pan over medium-high heat.
- Add garlic, ginger and shallots. Cook, stirring for 2 minutes.
- Add paprika powder. Cook, stirring, for 1 minutes or until aromatic.
- Add mushrooms. Stir to combine.
- Slowly add coconut milk, stirring constantly. Cook, uncovered, for 10 minutes or until sauce thickens slightly. Reduce heat.
- Add shrimps. Cook for 3 minutes or until shrimp just turn pink.
- Discard kaffir lime leaves.
- Serve hot with plain steamed jasmine rice.
